Chefs encourage solutions to America’s massive food waste habit

Almost 40 percent of the food Americans produce is uneaten and goes to waste, according to the James Beard Foundation, at the same that time many families struggle to put food on their tables.

The foundation’s COO, Kris Moon, appeared Monday at the NaplesNEXT Ideas Festival with a group of chefs to promote food sustainability and to offer ideas on how chefs can help lead the campaign to make Americans more cognizant of the value of eating and using food wisely, and of assuring that less food is wasted.
